We roast based on the orders that come in, and don't have old coffee sitting around on our shelves waiting for orders. At the end of each day of roasting and fulfilling orders, we have various amounts of various coffees left over.
Fly Standby and get whatever happens to be available that day. It might be straight up Guatemala or it might be part Indonesia, part Colombia, part Honduras. It might be up to a week past its roast, but sealed to maintain most of its freshness.
